Slow Roasted Peaches & Strawberry with Honey Mascarpone

This is a great recipe that presents well and is easy to make.

Slow Roasted Peaches with Honey & Cinnamon Mascarpone

Ingredients

  • 4 peaches
  • 40ml honey
  • 50gr mascarpone cheese
  • 50ml double cream
  • 2gr ground cinnamon
  • 1/2 lemon juiced
  • 50gr brown sugar
  • 20gr butter
  • 4 strawberries

Instructions

Wash peaches, cut in half and pat faces dry.

Mix butter, brown sugar and lemon juice.

Rub sugar mix on to cut peach face.

Place peach face down on greased baking tray.

Drizzle honey over peaches and place in low oven at 120 oC for approx 40 mins.

After 20 mins, remove tray from oven and spoon coat peaches with toffee liquid from bottom of tray. Return to oven for remaining 20 mins.

In a bowl, mix mascarpone with honey.

In a separate bowl, whip double cream then fold in mascarpone mix.

Add cinnamon to taste (1/4 teaspoon) and place in fridge.

When peaches are cooked, save liquid and allow peaches to cool slightly.

Slice strawberries and layer with roasted peaches.

Serve with scoops of mascarpone and toffee juices.

Notes

Great simple dessert that looks great on the plate.
