• 3 green apples
  • 4 whole eggs
  • 100gr brown sugar
  • 10gr nutmeg
  • 200gr SR Flour
  • 100gr raisins
  • 30ml brandy
  • 200ml double cream
  • 30gr castor sugar


Peel apples and cut into 1cm cubes
Toss apples in brown sugar and nutmeg
Mix eggs and apple and then add flour
Grease individual muffin moulds or 12 inch cake tin
Pour in mix and bake at 180 degrees for 15 minutes
Whip cream with 1/2 brandy
Toss Raisins in brandy and then roll in castor sugar
Serve cake warm with cream and raisins


Serve hot with cream melting down the sides or cold for a great lunchtime treat.
